Codfish flakes

Thinly slice the codfish and arrange the flakes on the plate. Then mix the onion with the garlic in a baking tray and season it with half the olive-oil, vinegar, wine, salt and pepper. Bake in an oven heated to 150 ºC for about 45 minutes. Then, mix in the rest of the olive-oil until you obtain a homogeneous texture. Season the codfish flakes with this mixture, garnish it with a fried egg and scent it with parsley and pepper.
Finish it off with Palhíssimas.

  • 400 g desalted codfish fillet
  • Freshly ground black pepper to taste
  • Extra virgin olive-oil to taste
  • 100 g onion wedges
  • 10 g slices of garlic
  • 1 dl extra virgin olive-oil
  • 0.5 dl white wine
  • 0.3 dl white wine vinegar
  • Traditional sea salt to taste
  • 4 eggs
  • Parsley to taste
  • Palhíssimas to taste
