Tomato, cottage cheese and basil

Slice the tomato, garnish with small chunks of cottage cheese, and season with extra virgin olive-oil, crushed green pepper, and fleur de sel. Add basil and finish off with Palhíssimas.
Pennyroyal, mint leaves, or even chives (with a more neutral aroma) are a good choice of herbs.
